Moorish Miso Soup




This week special at Wray Organic Market and Cafe is Brown Rice Miso at $13.95. They also have a recipe on their newsletter for Moorish Miso Soup which we are making for dinner tonight.

I talked to a naturopath a while back about foods she would recommend my husband and I eat on a regular basis. One of the things on a long list was Brown Rice Miso. There is a reason why there are millions of people in Japan who eat this on a daily basis. Hubby always enjoys the miso soup that comes in the meals at Chinatown and now we can have it at home. This is perfect for winter and year round. 




Ingredients:

Base: 


o 3 Tbsp brown rice miso (or barley miso)
o 5 cups filtered water
o 1/4 cup olive oil
o 1 Tbsp ginger, grated
o 1 Tbsp mirin
o 1 Tbsp brown rice vinegar

Soup toppings

o 1/2 pk silken tofu, chopped in small squares (optional)
o 15 swiss brown (or button mushrooms), stem removed, peeled & finely sliced
o 3 Tbsp tamari
o 3 Tbsp sesame oil
o 1 cup spring onions, finely sliced
o 1 cup arame, soaked in warm water for 10 mins (optional, I'm adding dulce flakes)

Note: We will be substituting the arame for dulce flakes, and without the tofu
