Freedom Foods Maple Crunch


It is rare that I find a gluten-free cereal that I not just like but love.

Freedom Foods Maple Crunch is amazingly tasty, mostly due to the 2% maple sugar.

It is crunchy and doesn't get soggy in milk. I find myself munching on it at night, too. Yumm!

GLUTEN FREE - NUT FREE - WHEAT FREE

INGREDIENTS:

Maple Crunch is thoughtfully made with: Gluten Free Flour Mix (76%) [Rice Flour, Whole Grain Sorghum Flour (21%), Corn (Maize) Flour] Cane Sugar, Psyllium Husk, Maple Syrup (2%), Canola Oil, Salt, Emulsifier (Sunflower Lecithin), Flavours

Wray Organic: Breakfast Toastie and White Rose Goji tea

I love shopping at Wray Organic Market and Cafe in Cleveland. Located in Ross Court (a court off Bloomfield St - where Pizza Hut is located), there is a large range of Organic products from around Australia and the world. They also stock a large range of Gluten-Free products, including meals and desserts in their Cafe. 

I was feeling a bit peckish, having missed breakfast and after perusing the food available settled on a breakfast toastie, made with gluten-free bread. It had organic eggs, ham and tomato. It came with a salad that has their signature wray organic cafe salad dressing. 


 I chose an interesting tea mix of white rose petals and goji berry. It was very nice and from wht I have read, very healthy. The goji berry flavour was lovely and I felt very refreshed.

I didn''t buy a dessert despite the fact it was very tempting. I was eyeing-off a raw dessert when someone else bought it. Oh well. Next time.

Recipe: Lemon and Mint Sorbet

Continuing with the theme of gluten-free recipes featuring mint I just had to share this amazing lemon and mint sorbetrecipe fromAustralian Gourmet Traveller website newsletter. (Reposted from Illawarra Gluten Free)

This tastes just as you would imagine: light and tangy, with the lingering flavour of mint.

Lemon and mint sorbet

Serves 4 
Cooking Time Prep time 10 mins, cook 5 mins (plus freezing) 
 
220 gm  (1 cup) caster sugar
2 tbsp  coarsely chopped mint leaves, plus extra leaves to serve
1  lemon, finely grated rind only, plus extra lemons to serve (optional)
½ tbsp  liquid glucose
75 ml  lemon juice

1Combine sugar, mint, lemon rind and 125ml water in a saucepan, stir over low heat until sugar dissolves. Stir through glucose then lemon juice and strain (discard solids). Freeze in an ice-cream machine according to manufacturer’s instructions. Serve scoops of sorbet in hollowed-out lemons, if desired, and garnish with extra mint leaves.

Arrowroot Bars

"A soft cookie, great for lunches."
INGREDIENTS:
1 cup unsalted butter
1/2 cup confectioners' sugar
1/2 teaspoon almond extract
2 cups arrowroot flour
6 egg whites
1/2 teaspoon cream of tartar
1/3 cup confectioners' sugar
for decoration
DIRECTIONS:
1.Preheat oven to 350 degrees F (180 degrees C). Thoroughly butter the bottom and sides of a 13 x 9 inch baking pan.
2.In a large mixing bowl, cream together the butter and sugar. Beat in the almond extract. Gradually mix in the arrowroot flour.
3.In a separate bowl, beat the egg whites and cream of tartar until stiff peaks form. Gently fold the egg whites into the batter. Pour the batter into the baking pan and smooth the surface with a rubber spatula. Bake for 30 minutes, or until a toothpick inserted in the center comes out clean. Dust with confectioner's sugar.

Naturopathy: Food Compatibility Test via hair - Bio Compatibility Test

On October 4th, 2012 I had a hair sample taken by Gayle who then sent it off to Naturopathic Services for a Food Compatibility or Bio Compatibility Test. The pages below are the results. 

Anything in red I should avoid completely. Everything else is compatible with my biological system. There will be a retest at a later date and the foods in red and black may change.

One of the biggest troubles I have is finding gluten-free bread that tastes great and is healthy, too.

Fortunately for me there are a few places in Cleveland that sells gluten-free bread, pastries and cakes.

A new find for me is Bakery Bliss which is located on Bloomfield St (near Pizza Hut) which not only sells bread but pizza bases, meat pies, pull-a-parts, turkish bread and more.

Gluten-Free Cornbread recipe

A few weeks ago I made some amazing cornbread with some yellow polenta I purchased from an Italian Delicatessan & Cafe inWarrawong, NSW. The bread was so light and fluffy that we went through two loafs in no time. It is delicious hot or cold and the older the loaf got the more tasty it was, the texture changing to a crusty bread with a really unusual texture from the polenta flour in the mixture. This recipe makes two loaf pans and it freezes well.

1 cup gluten free flour (I used white maize meal but you could use one of a number of gluten-free flours listed
1 cup yellow polenta
1/4c sugar or alternative (the first time I used raw sugar and the second I used agave syrup which has lower GI and tastes great)
2tsp cream of tartar
1tsp baking soda
1tsp cornflour
3/4tsp salt
1/4cup butter (or coconut oil)

2 eggs (or Orgran Egg Substitute)
1 cup buttermilk (or rice milk for dairy-free)


Combine and fill two loaf pans and bake @ 220oC for 25 min

Note: To make this recipe gluten free it is important to use baking soda, cream of tartar and cornflour rather than baking powder.

Take Away: Pizza Capers Cheaper Tuesday


Last night (Monday August 20th, 2012) I was googling home delivery options in Cleveland (near Brisbane, QLD and decided to phone our local Pizza Capers. I asked if there were any specials or voucher deals and was told that 'Tomorrow is Cheaper Tuesday - two pizzas from our originals line for $24.95".

I thanked that wonderful Pizza Capers employee and decided to have Chinese food that night and splurge on Pizza Capers Cleveland Cheaper Tuesday tonight.

I am SO glad that I did!!!

After some deliberation I decided on a Capers Supremo and a Bonanza. The supremo is covered in capsicum, which my husband is allergic to, so I asked for a substitution of roasted beetroot. I also paid $1 extra for some camembert (spotted as an ingredient on the Alfunghi pizza).

Pizza Capers is a big pizza chain that reminds me of Crust Gourmet Pizza in Wollongong. Gourmet food, quality pizza ingredients, great flavour combinations and fantastic service.

Local Food Heroes - Cleveland, QLD: Browns Bakery Cafe

Since moving to Cleveland in South-East Brisbane I have been searching for producers of gluten-free items. My favourite of all is Browns Bakery Cafe in Cleveland. It has a wide range of gluten-free items including breads, pizza bases, slices, muffins and cakes.

What's nice about this bakery is that it is a cafe vibe, with tables set out to the side of the cafe in the small arcade that also houses an Arts & Crafts and Music store.
