Baked Ricotta with capers, thyme and Dorsogna triple smoked ham


The first time I tasted baked ricotta cakes was when I was living near the Gourmet Platter store in Corrimal, NSW. Once a week they had tastings of new products and I fell in love with the texture and flavour of their ricotta cakes with ham and capers.

Tonight I decided to make some for Philip and I since he treated me to a round of fresh ricotta. I felt like making something special to say thank you for all the nice things he does for me. I would not be as productive and successful without his support. He does the lion's share of the cooking and cleaning whilst I work on my photography and web design business which I am forever thankful for.

The recipe isn't difficult and you'll be surprised how good it tastes. If you spend the time whipping the egg whites you'll find the texture similar to a souffle - llght and fluffy. As Philip said, "Just close your eyes and enjoy."

Combine one cup of fresh ricotta cheese with the yolks of two eggs, diced capers, fresh thyme leaves, chopped dorsogna triple smoked ham, 1/3 cup of pizza cheese (mozzarella, parmesan and cheddar), salt and pepper. Whisk up the two egg whites and fold into the mixture a nthird at a time until gently combined.

Spoon into buttered ramekins and bake in the oven for 20 minutes at 350oF

Serve with a salad such as the mediterranean salad pictured which includes mixed salad greens, marinated kalamata olive, olive oil, garlic, diced tomato, lemon juice, lemon zest and chopped parsley. Delicious!

I was googling Coconut Scrub today and came across the amazing Deliciously Organised website. I am sharing her overview of Health Cleanse and Shopping list with you, dear reader because it is an amazing resource. Her website is where I want An Instant On The Lips to be someday.

I am happy to say that I have the majority of items on her shopping list and my health cleanse is coming along nicely. I find the site easy to navigate and I am loving the amazing content found within. Kudos!

What does the cleanse consist of?

Here is a start! Everyone has different tastes, but I seem to stick to several of the items listed below on my shopping trips. These items I've collected over time because it is expensive to run out and buy all the items at once. People who are new to cleanses may want to go easy and only incorporate a few new things, others may want to go all out and try things like Superfoods, etc. I personally don't use soy products, but you could add them to your list too. Lastly, best to eat raw {live enzymes}/whole grain foods when doing a cleanse...but there are several canned/pasta/treats on this list too if you're not ready to do a full on cleanse.

Recipe: Delicious Coconut Lavender Scrub

Scrubs are a wonderful way to gently exfoliate and leave you feeling fresh and renewed. 
Making your own is a breeze, and most the time you can use what you already have at home. 

1 cup organic cane sugar
1/3 cup celtic sea salt
1/2 cup organic coconut oil
2-3 tablespoons almond oil
2-3 tablespoons raw organic honey
1 tablespoon vitamin E
5 drops Lavender Essential Oil

Directions

start with a recycled Glass jar, and then add a little bit of the salt, sugar, coconut oil {one at a time so I can control the consistency} and then add the rest of the ingredients.

Keep in an air tight container will last 3 months

Breakfast not only provides key "fuel" for the body and brain to power and prepare them for the day ahead, but also kick-starts your metabolism for the day ahead! 

If you are beginning a Raw Food Diet or even beginning to experiment with Raw Food Recipes, you may be wondering what to eat as a Raw Breakfast.

 It is not only smoothies and fruit which are easily made on the go, try these quick and easy Raw Breakfast Recipes, packed with everything you need to start the day in the right way!




Vitality 4 Life's Raw Breakfast Recipes:

Raw Banana Pancakes
Serving for 1
Ingredients:
  • 1 banana
  • 2 tablespoons coconut meal or dried coconut flakes
  • Cinnamon
Mash the banana with a fork in a bowl until smooth. Add the coconut meal and some cinnamon, mix well. Flatten the banana/coconut dough and make small pancakes of them. Put the pancakes in a Food Dehydrator or in the oven until they are crispy on the outside. They shouldn't be completely dry but just on the outsides. It is better to prepare them the night before so you only have to heat them up before breakfast time!
Garnish with your favourite fresh fruits, syrups or agave syrup.

Protein Packed Chia Gel Cereal with Seasonal Fruit
Serving for 1
  • 1 tsp chia seeds
  • Dash of cinnamon
  • Ground flax
  • Seasonal fruits such as apple, mixed berries and grapefruit
Place 1 teaspoon of Chia Seed with 8 teaspoons of water.Let it stand and "set" for 30 minutes and a gel will form. Chia is almost tasteless and practically anything can be added to make flavor. It is also a super protein seed and provides you with maximum energy. Add seasonal fruits for a delicious protein-rich start to the day!

Super "Get-Up & Go " Green Smoothie:
  • 1 handful of raw nuts (almonds, cashews)
  • 1/2 head of large bunch of organic spinach
  • 3-4 stalks of celery
  • 1 organic apple
  • 1 organic banana
  • 1/2 of lemon juice
  • Coconut Water
Place ingredients into Bio Chef Blender and mix until you have a smooth consistency Pour into a large glass and enjoy!

Awesome Acai Berry Bliss Bowl For one breakfast bowl
  • 1 heaped tablespoon of freeze dried Acai powder
  • 1 frozen banana
  • ½ cup of frozen berries
  • ½ cup of fresh apple juice, coconut water or almond milk
  • 1 tablespoon of hemp seeds
  • ¾ cup of granola, or other muesli
  • Fresh sliced banana, goji and bee pollen to add colour and decorate your bowl

Berry Blast Smoothie

In this recipe berries bring a sweet fragrance with a subtle tart overtone and make this low GI treat a real winner. Research is suggesting that raspberries have the potential to inhibit cancer cell proliferation and tumour formation. Raspberries contain ellagic acid, an antioxidant that neutralizes free radicals and prevents damage to cell membranes. Whilst fresh berries are best, freezing does not destroy their anti-oxidant activity and is sometimes more convenient. Berries are also heart-healthy foods. In a Finnish study, subjects who ate two serves of berries a day were found to have lower blood pressure and lower cholesterol.

Spinach has been found to have thirteen different flavonoid compounds with anti-cancer properties. Spinach has been shown to slow down the growth of cancer cells in the stomach and the prostrate and to be inversely related to the incidence of breast cancer. Spinach has also been shown to protect against osteoporosis, heart disease, colon cancer and arthritis.

Ingredients:
1 cup raspberries
1 cup blueberries
1 apple
3 big handfuls of baby spinach
2 cups of water
Using any good blender – we use the Power Mill Blender - blend together the apples, raspberries, blueberries and water for 30 seconds. Add the baby spinach and blend until smooth.

Warming Ginger Smoothie

The combination of pineapple, mango and ginger in this smoothie gives it an Asian twist. If you are in a cold climate then don’t let this stop you from drinking green smoothiesGinger is warming on a cold day and also helpful during colds and flus to help you sweat and promote detoxification. Ginger also eliminates intestinal gas, relaxes and soothes the intestinal tract and is anti-inflammatory. In herbal remediesginger is used to alleviate nauseadizziness and vomiting. To benefit from ginger you only need to use a little, as the active substances in ginger are so concentrated.
Pineapple is an excellent source of manganese, which is an important mineral in energy production. Pineapple is often recommended to promote good digestion.
Ingredients:
½ head romaine lettuce
1 cup pineapple
1 large mango
1-inch fresh ginger
Blend the pineapple, mango, ginger and water for 30 seconds. Add the romaine lettuce and blend until smooth.

Totally Green Smoothie

Ingredients:
1 avocado
1 large cucumber
2 cups spinach
2 large leaves collard greens
2 leaves black kale
3 lemons, juice only
1.5 cups water
(a few slices of a Gala apple sometimes)
Blend well using the extremely versatile Power Mill Blender


Kiwi and Avocado Green Smoothie

Avocado makes it creamy. Kiwi adds a little grit and spice, especially when you toss them in unpeeled!
Serves 2 easily
Ingredients:
2 cups of water
2 Kiwi Fruits
1/4 cup of banana
1 mango
3 cups of kale
1 avocado
Blend well using the Power Mill Blender
For people who are not getting enough green foods, this is a really great way to get started with a huge bank of enzymes.

Ingredients:
5 kale leaves (green)
1/2 bunch of fresh dill
1/2 lime (juiced)
3 cloves garlic
1/4 cup sundried tomatoes
2 cups of water
